Nice list Darren, my gaming days started in the early 90's so most of my picks are titles from that era, anyway here goes:

Street Fighter 2, Super Street Fighter, Alpha, EX
    Final Fantasy IV, VI, VII
    Tekken, Tekken 2
Super Mario World, Mario Kart, Mario 64
    Time Crisis
    Crash Bandicoot, Crash Team Racing
Legend of Zelda: Ocarina of Time
    Blast Corps
Clayfighter, Clayfighter 64 (Awful games but in my eyes they were so bad, they were good!)
    Crono Trigger
Broken Sword, Broken Sword 2: The Smoking Mirror
    Darkstalkers
    Banjo Kazooie
WWF Super Wrestlemania, Royal Rumble, Raw
    Starwing
    Goldeneye 007
    Parappa The Rapper

Subbuteo football and rugby. Used to re-write the histories of 2 of the teams closest to my heart (Man City and Salford RLFC). England were quite realistic though ie garbage and there were often casualties when a giant Great Dane invaded the pitch.

Football manager on the spectrum (see Man City comment above). I'd spend hours playing this.

Pocket Simon, Demon driver and handheld space invaders.

      Galaxian (i'm easily pleased)

1942 (I was unbeatable on this).

Ghouls and ghosts / Ghosts and goblins. Any resident evil games. Would play these through the night.

I currently have a 360 but since becoming a father in 2007 my life as a gamer appears to have ended. Love Crash nitro kart though.

Remembering my ZX Spectrum days of the early '80s -

Skool Daze / Back 2 Skool ("Please Sir, I cannot tell a lie, ERIC hit me!")
Turbo Esprit (not to be confused with 'Lotus Esprit Turbo Challenge')
Lotus Esprit Turbo Challenge (not to be confused with 'Turbo Esprit')
          Spy Hunter
          Full Throttle
Minder (based on the TV show - strangely compelling!)
Hyper Sports (this wrecked a few joysticks)
          Hard Drivin'
"We're the Sweeney son, and we haven't had any dinner!"
