Anyone like to cook? I do. I'm rubbish, but I do anyway
If you cook, you must have a few recipes you use often, and have refined a bit. I'm not talking fancy-pants stuff, just staple foods you cook alot.
That's the stuff I want to hear about.
Here's mine: Refried beans and chips.
Ing:
1 tin kidney beans
1 onion
As many potatoes as you want chips.
Finely chop onion, season, and fry on meduim heat for 10-15 mins or until tender and flavoursome.
Poor some veg oil onto a baking tray and place in very hot oven.
Meanwhile, chop loads of spuds into generous-sized chips. (Don't peal them as the skins are good for you).
Mash beans. Season.
Boil chips until very almost done, then drain.
Take out sizzling pan from oven and chuck chips in. Toss, and chuck back in oven.
Add a generous load of paprika to the onions, along with a bit of cumin, coriander, chilli flakes and a pinch of rosemary.
Fry for thirty or so seconds to release the flavours, and then add mashed beans and a glug of water to prevent dryness.
Spread out and fry. Fry enough for flavour but don't dry it out.
Turn the chips after 10-15 mins, then after 3-8 mins more they should be done. Add a pinch of salt (and vinegar if you like) to taste.
